At conferences often there's a lot of one-way communication and passive learning. This can result in many members feeling under-engaged and not full participants of the conference. The result is that some "participants" get restless and they will subtly or, not so subtly, sabotage the conference. Themed experiential activities are a way of releasing some of that energy and fully engaging participants as they learn how to work together better.
